Easy hummus with lemon and arlic

Hummus and brown rice, hummus and crackers, hummus and veggies (raw or steamed). Hummus definitely is a staple in my home and I usually have container in the fridge and a bunch more in the freezer! Yes, you can freeze hummus and you can also make it with legumes other than chickpeas. Use soy, lentils, or white beans for hummus. Whatever you do keep in mind you can achieve a complete protein meal if you eat your hummus with a grain, like brown rice, farro, or sprouted grain bread. Then add a bunch of veggies for vitamins, minerals and fiber, and Pow! You have an easy meal with all the other nutrients needed for your health inspired whole foods diet.

Eating whole grains allows us to get nutrient dense food and protein with plenty of fiber. Unprocessed ancient grains like farro (emmer wheat) also provide essential minerals, antioxidants, B vitamins, and other protective nutrients that research studies show reduce chronic diseases like Type 2 Diabetes, Heart Disease and Cancer! Add some roasted veg like cauliflower, a few kernels of sweet corn, and garnish with arugula for a completely stellar vegetarian (and vegan) meal.

Beet Stew with Greens

This beet stew is chunky, meaty and full of nutrients, protein, and healthy fats. I like making BIG batches so we have some to eat for a few days. The beets and green contain antioxidant vitamins and minerals like iron, magnesium, and calcium. When added to a protein based broth, especially with bone broth it becomes medicine. The veggies provide plenty of fiber. Eat often throughout the winter to keep yourself strong and invigorated!
